Ingredients
4 bone-in pork chops (about 1-inch thick, 1 ½ lbs/680g)
1 cup (125g) all-purpose flour
1 teaspoon garlic powder
1 teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
2 large eggs
1 cup (100g) breadcrumbs
¼ cup (60ml) vegetable oil
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups (480ml) chicken broth
½ cup (120ml) milk
Salt and pepper to taste
Instructions
1. Pat pork chops dry, mix flour with garlic powder, paprika, salt, and pepper in one dish, beat eggs in another, and use breadcrumbs in a third.
2. Dredge chops in flour, dip in eggs, then coat with breadcrumbs.
3. Fry in heated vegetable oil for 4-5 minutes per side until 145°F, then drain on paper towels.
4. Melt butter in the skillet, stir in 2 tablespoons flour for a roux, then whisk in broth and milk until thickened, about 3-5 minutes.
5. Season gravy with salt and pepper, then serve over pork chops.
6. Pair with sides and serve hot.
Notes
Use panko for extra crunch in breading.
Add a splash of cream for richer gravy.
Bake at 400°F for 20-25 minutes as an alternative.
