Ingredients
2 cups (370g) cooked white rice
2 cups (300g) broccoli florets (fresh or frozen)
2 cups (300g) cooked, shredded chicken
1 can (10.5 oz/298g) cream of chicken soup
1 cup (240ml) milk
2 cups (200g) shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt
¼ teaspoon black pepper
½ cup (50g) breadcrumbs
2 tablespoons unsalted butter, melted
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2. Mix rice, broccoli, and chicken in a bowl.
3. Whisk cream of chicken soup, milk, garlic powder, onion powder, salt, pepper, and 1 ½ cups cheese until smooth.
4. Combine sauce with rice mixture, transfer to dish, and top with remaining ½ cup cheese.
5. Mix breadcrumbs with melted butter, sprinkle over top, and bake for 25-30 minutes.
6. Cool for 5 minutes and serve warm.
Notes
Blanch fresh broccoli to avoid excess water.
