Ingredients
1¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground ginger
½ teaspoon ground cloves
½ teaspoon ground cardamom
¼ teaspoon ground nutmeg
¾ cup pure pumpkin puree
2 large eggs
⅓ cup pure maple syrup
½ cup light brown sugar
½ cup vegetable oil
1 teaspoon vanilla extract
¼ cup milk
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
2. Whisk together flour, baking soda, baking powder, salt, and chai spices.
3. In another bowl, whisk pumpkin puree, eggs, maple syrup, brown sugar, oil, vanilla, and milk.
4. Combine wet and dry ingredients until just mixed.
5. Pour batter into pan and bake 50-60 minutes or until toothpick comes out clean.
6. Cool 10-15 minutes in pan, then transfer to wire rack to cool completely.
Notes
Store in airtight container at room temperature up to 3 days or freeze for up to 2 months.
