2 cups broccoli florets, lightly steamed – adds color and crunch

1½ cups uncooked white rice – soaks up the sauce

3 cups chicken broth – keeps rice tender, adds flavor

1 cup shredded cheddar cheese – melty, cheesy goodness

½ cup grated Parmesan cheese – sharp, nutty flavor

1 can (10.5 oz) cream of mushroom soup – creamy binder

½ cup sour cream – tangy richness

1 small onion, finely chopped – aromatic sweetness

2 garlic cloves, minced – savory punch

1 tsp salt – balances flavor

½ tsp black pepper – mild kick

½ tsp paprika – gentle smoky warmth

2 tbsp olive oil or butter – for sautéing aromatics

Optional: ½ cup breadcrumbs or crushed crackers – crunchy topping


Instructions

1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

2. Heat olive oil or butter in a skillet. Sauté onion 3-4 minutes, then add garlic for 30 seconds.

3. In a large bowl, mix cream of mushroom soup, sour cream, 1 cup cheddar, Parmesan, salt, pepper, and paprika until smooth.

4. Fold in uncooked rice, chicken, and steamed broccoli until evenly coated.

5. Spread mixture in prepared baking dish. Top with remaining cheddar and optional breadcrumbs.

6. Cover with foil and bake 35 minutes. Remove foil and bake 10-15 minutes until golden and bubbly. Check rice doneness; add broth and bake 5 more minutes if needed.

Notes

You can substitute cream of mushroom with cream of chicken soup.

Brown rice can be used, but will require 10-15 extra minutes baking time.
