Ingredients
2 boneless, skinless chicken breasts – sliced thinly
8 ounces noodles (udon, ramen, or spaghetti)
2 tablespoons vegetable oil
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/4 cup soy sauce
2 tablespoons honey or brown sugar
2 tablespoons rice vinegar
1 tablespoon cornstarch
1/4 cup water
2 green onions, sliced
Sesame seeds, optional
Steamed or sautéed vegetables, optional
Instructions
1. Cook noodles according to package instructions; drain and toss with a little oil.
2. Heat vegetable oil in a large skillet and cook chicken until golden and cooked through.
3. Remove chicken; sauté garlic and ginger in the same skillet until fragrant.
4. Whisk soy sauce, honey, rice vinegar, cornstarch, and water; add to skillet and stir until thickened.
5. Return chicken and noodles to skillet; toss to coat evenly.
6. Add optional vegetables, garnish with green onions and sesame seeds, and serve.
Notes
For gluten-free, use tamari and rice noodles.
Adjust sweetness by adding more or less honey.
You can substitute chicken with shrimp, beef, or tofu.
