Ingredients
2 1/4 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
3/4 cup unsalted butter, softened
1 cup granulated sugar (plus extra for rolling)
1 large egg
1/4 cup molasses
1 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
2. In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and cloves.
3. In a large bowl, beat softened butter and 1 cup sugar until light and fluffy.
4. Add egg, molasses, and vanilla extract, mixing until combined.
5. Gradually add dry ingredients to wet, mixing just until combined.
6. Scoop tablespoon-sized dough balls, roll in granulated sugar.
7. Place 2 inches apart on baking sheets.
8. Bake 8–10 minutes until edges are set but centers soft.
9. Cool on baking sheets 5 minutes, then transfer to wire racks.
Notes
Store cookies in an airtight container at room temperature for up to one week.
Freeze dough balls for longer storage; bake straight from frozen, adding 1–2 minutes to baking time.
