Ingredients
2 cups (240g) all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
¾ cup (150g) granulated sugar
½ cup (115g) unsalted butter, softened
2 large eggs
½ cup (120ml) fresh orange juice
1 tablespoon orange zest
1 cup (120g) fresh or frozen cranberries
½ cup (120g) plain yogurt
1 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan with parchment.
2. Whisk flour, baking powder, baking soda, and salt in a bowl.
3. Beat butter and sugar until fluffy, then add eggs, orange juice, zest, yogurt, and vanilla.
4. Mix in dry ingredients gently, fold in cranberries, and pour into pan.
5. Bake for 55-65 minutes until a toothpick is clean.
6. Cool for 10 minutes, then transfer to a rack.
Notes
Use dried cranberries if fresh aren’t available, rehydrating them first.
