½ cup light corn syrup – prevents crystallization, smooth texture

½ cup water – dissolves sugar for syrup

2 large egg whites – whipped to create airy texture

½ tsp salt – balances sweetness

1 tsp pure vanilla extract – adds warm flavor

1 cup chopped pecans or walnuts (optional) – nutty crunch

Food coloring (optional) – festive colors


Instructions

1. Line a baking sheet with parchment paper

2. In a medium saucepan, combine sugar, corn syrup, water, and salt; stir until sugar dissolves

3. Attach a candy thermometer and cook over medium heat until syrup reaches 250°F (hard-ball stage)

4. Meanwhile, beat egg whites until stiff peaks form

5. Slowly pour hot syrup into whipped egg whites while mixing

6. Beat until mixture holds stiff peaks and loses glossy shine

7. Fold in vanilla and nuts (if using) and food coloring (optional)

8. Drop spoonfuls onto prepared baking sheet

9. Allow to set at room temperature for about 2 hours

Notes

Best made on a dry day to prevent stickiness

Use a candy thermometer for precise syrup temperature
