Ingredients

3½ teaspoons baking powder

1 tablespoon granulated sugar

½ teaspoon salt

1¼ cups milk (whole or 2%)

1 large egg

3 tablespoons unsalted butter, melted

1 teaspoon vanilla extract (optional)

Butter or oil for greasing the pan


Instructions

1. In a large mixing bowl, whisk together flour, baking powder, sugar, and salt.

2. In a separate bowl, beat the egg and mix in milk, melted butter, and vanilla.

3. Pour wet ingredients into dry ingredients and stir gently until just combined.

4. Let batter rest for 5 minutes while heating the pan.

5. Heat skillet over medium heat and grease lightly.

6. Pour ¼ cup batter per pancake; cook until bubbles form and edges set.
