Ingredients

6 tablespoons (85g) unsalted butter, melted
1 cup (240ml) heavy cream
8 oz (225g) cream cheese, softened
½ cup (100g) granulated sugar
1 can (20 oz/567g) crushed pineapple, drained
1 teaspoon vanilla extract
1 tablespoon lemon juice
Whipped cream (for topping)
Pineapple chunks (for garnish)
Instructions
1. Mix graham crumbs and butter, press into a 9-inch pie dish.
2. Beat cream cheese and sugar until smooth, add pineapple, vanilla, and lemon juice.
3. Whip heavy cream to stiff peaks, fold into cream cheese mixture.
4. Spread filling into crust, smooth top, and freeze for 4 hours or overnight.
5. Top with whipped cream and pineapple chunks before serving.
6. Let sit 5-10 minutes, then slice and serve chilled.
