2 cups Oreo cookie crumbs (about 24 cookies, finely crushed)

5 tbsp unsalted butter, melted

Pinch of salt

For the Chocolate Cheesecake Filling:

24 oz (3 blocks) cream cheese, softened

1 cup granulated sugar

3 large eggs, room temperature

1 cup sour cream, room temperature

8 oz German’s sweet chocolate, melted and cooled

1 tsp vanilla extract

¼ cup all-purpose flour

For the Coconut-Pecan Frosting:

1 cup evaporated milk

1 cup granulated sugar

½ cup unsalted butter

3 large egg yolks

1 tsp vanilla extract

1 ⅓ cups sweetened shredded coconut

1 cup chopped pecans

Pinch of salt

For the Chocolate Ganache Drizzle (Optional):

4 oz semi-sweet chocolate, chopped

½ cup heavy cream


Instructions

1. Preheat oven to 325°F (163°C). Wrap a 9-inch springform pan with foil.

2. Mix Oreo crumbs, melted butter, and salt; press into pan and bake 10 minutes. Cool.

3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then sour cream, melted chocolate, vanilla, and flour.

4. Pour over crust. Bake in water bath at 300°F for 60-70 minutes, then cool gradually.

5. Cook evaporated milk, sugar, butter, and yolks until thickened; stir in vanilla, coconut, pecans, and salt. Cool.

6. Spread frosting over chilled cheesecake; drizzle with ganache if using. Chill 1 hour.

Notes

Use room-temperature ingredients to avoid lumps in the batter.

A water bath prevents cracks—don’t skip it!

Frosting can be made ahead and stored in the fridge for up to 2 days.
