Ingredients
3 cups all-purpose flour
3/4 cup brown sugar, packed
3/4 cup molasses
1 large egg
1/2 cup unsalted butter, softened
1 teaspoon baking soda
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
Optional: powdered sugar or royal icing for decorating
Instructions
1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
2. In a large bowl, cream the softened butter and brown sugar until light and fluffy.
3. Beat in the egg and molasses until fully combined.
4. In a separate bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
5. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
6. Divide the dough into two discs, wrap in plastic, and chill for at least 1 hour.
7. Roll out the dough on a floured surface to about 1/4 inch thick. Cut into desired shapes using cookie cutters.
8. Place cookies on prepared baking sheets about 1 inch apart.
9. Bake for 8–10 minutes, or until edges are firm but centers are still soft.
10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
11. Decorate with powdered sugar or royal icing if desired.

Store in an airtight container for up to 1 week or freeze for longer storage.
