Description

Homemade Reuben bake is a cheesy, layered casserole with corned beef, sauerkraut, Thousand Island dressing, and Swiss cheese. A warm, savory twist on the classic sandwich.


Ingredients

1 lb corned beef, chopped or shredded

1 (14 oz) can sauerkraut, drained and rinsed

2 cups shredded Swiss cheese

1 (8 oz) package rye bread, cut into 1-inch cubes

1 cup Thousand Island dressing

2 tablespoons butter, melted

1 teaspoon caraway seeds (optional)

Salt and pepper, to taste


Instructions

1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

2. In a large bowl, mix corned beef, sauerkraut, and caraway seeds. Season with salt and pepper.

3. Spread half of the rye bread cubes into the baking dish.

4. Layer half of the meat mixture over the bread, then sprinkle with 1 cup of Swiss cheese.

5. Repeat the layers with remaining bread, meat, and cheese.

6. Drizzle Thousand Island dressing evenly over the top.

7. Pour melted butter over the top layer.

8. Cover with foil and bake for 25 minutes.

9. Remove foil and bake an additional 10–15 minutes until golden and bubbly.

10. Let cool 5 minutes before serving.

Notes

Swap rye bread for sourdough or pumpernickel.

Add sautéed onions or pickles for extra flavor.

Use provolone instead of Swiss for a milder taste.

Freeze before baking for meal prep.
