Ingredients
4 salmon fillets (about 6 oz each)
1 cup pineapple chunks (fresh or canned, drained)
1/3 cup honey
2 tablespoons soy sauce
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon fresh ginger, grated (optional)
Juice of 1/2 lime (optional)
Salt and black pepper, to taste
Fresh chopped cilantro or green onion, for garnish (optional)
Instructions
1. Preheat oven to 400°F (200°C) and line a baking dish.
2. Whisk together honey, soy sauce, olive oil, garlic, ginger, and lime juice.
3. Place salmon in dish and season.
4. Pour honey mixture over salmon.
5. Scatter pineapple chunks on and around salmon.
6. Bake for 15–18 minutes until cooked.
7. Broil 2–3 minutes if desired for caramelization.
8. Garnish with cilantro or green onion.
