Ingredients

4 boneless, skinless chicken breasts

2 medium zucchinis, sliced into rounds

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and halved

1/2 cup crumbled feta cheese

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon paprika

Salt and pepper, to taste

Fresh parsley or basil, for garnish (optional)


Instructions

1. Preheat your oven to 400°F (200°C).

2. In a large baking dish, drizzle olive oil and spread the minced garlic evenly.

3. Arrange the chicken breasts in the dish and season them with salt, pepper, oregano, basil, and paprika.

4. Surround the chicken with sliced zucchini, cherry tomatoes, and Kalamata olives.

5. Drizzle a little more olive oil over the vegetables.

6. Bake uncovered for 25–30 minutes until the chicken is cooked through and the vegetables are tender.

7. Remove from the oven and sprinkle crumbled feta cheese over the top.

8. Return to the oven for another 5 minutes until the cheese is slightly melted.

9. Garnish with fresh parsley or basil before serving.

Notes

You can prep this dish ahead of time and store it in the fridge before baking.

For extra richness, drizzle a touch of balsamic glaze over the finished dish.

Make it dairy-free by omitting the feta or using a plant-based alternative.
