Description

This Mexican With Trash Casserole is packed with layers of seasoned beef, melted cheese, and crunchy chips. It’s bold, satisfying, and perfect for busy weeknights.


Ingredients

1 pound ground beef

1 packet taco seasoning

1 cup salsa

1 can (10 oz) Rotel

1 can (15 oz) black beans, drained and rinsed

1 cup corn

2 cups crushed tortilla chips or Doritos

2 cups shredded Mexican blend cheese

1/2 cup sour cream

1/4 cup chopped green onions (optional)

Fresh cilantro for garnish (optional)


Instructions

1. Preheat your oven to 350°F (175°C).

2. Cook ground beef in a skillet until browned. Drain fat.

3. Add taco seasoning, salsa, Rotel, black beans, and corn. Simmer for 5 minutes.

4. In a greased 9×13 baking dish, layer half the chips, half the beef mixture, and half the cheese.

5. Repeat layers with remaining chips, beef, and cheese.

6. Cover with foil and bake for 20 minutes.

7. Remove foil and bake for 10 more minutes until cheese is melted.

8. Let rest for 5 minutes before topping with sour cream and garnishes.

9. Serve warm.

Notes

You can substitute ground beef with ground turkey or shredded chicken.

Use any shredded cheese you like — cheddar, pepper jack, or Monterey Jack all work well.

Add jalapeños for extra spice.
