This Orange Poppy Seed Loaf is moist and bursting with fresh citrus flavor, complemented by the delightful crunch of poppy seeds. Perfect for breakfast or a sweet snack.
Ingredients
1½ cups (190g) all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
2 tablespoons poppy seeds
1 cup (200g) granulated sugar
½ cup (115g) unsalted butter, softened
2 large eggs
½ cup (120ml) fresh orange juice
Zest of 2 oranges
½ cup (120ml) sour cream or plain yogurt
1 teaspoon vanilla extract
Instructions
1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and poppy seeds.
3. In a large bowl, cream the softened butter and sugar until light and fluffy.
4. Beat in the eggs one at a time, then stir in the orange zest and vanilla extract.
5. Alternately add the dry ingredients and orange juice to the butter mixture, beginning and ending with the dry ingredients. Mix just until combined.
6. Fold in the sour cream or yogurt gently.
7. Pour the batter into the prepared loaf pan and smooth the top.
8. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
9. Let the loaf cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Serve sliced plain or toasted, with butter, cream cheese, or honey. Store in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.
