Ingredients
4 pounds ripe peaches (peeled, pitted, sliced)
1 cup granulated sugar (adjust to taste)
1 tablespoon lemon juice
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg (optional)
¼ teaspoon salt
½ teaspoon vanilla extract (optional)
Instructions
1. Peel, pit, and slice peaches.
2. Cook peaches over medium heat until soft.
3. Blend peaches until smooth.
4. Add sugar, lemon juice, and spices; mix well.
5. Slow-cook on low, stirring often, until thickened.
6. Check for desired consistency.
7. Stir in vanilla extract if using.
8. Cool and store in jars.
Notes
Use frozen peaches if fresh are unavailable; thaw and drain first.
For a boozy twist, add bourbon or rum in final cooking minutes.
Reduce sugar or use sugar substitute for low-sugar version.
