Ingredients
1 pound ground beef
6 slices bacon, cooked and crumbled
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional, for heat)
Salt and pepper, to taste
8 ounces cream cheese, softened
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 can (10 oz) diced tomatoes with green chilies, drained
1/4 cup milk
2 tablespoons chopped pickles (optional, for that cheeseburger tang)
Fresh chives or green onions, chopped (for garnish)
Instructions
1. In a large skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain excess fat.
2. Add the chopped onion and minced garlic to the beef. Cook for 3–4 minutes until softened.
3. Stir in chili powder, smoked paprika, cayenne pepper (if using), salt, and pepper. Cook for another minute. Remove from heat.
4. In a separate bowl, mix softened cream cheese with milk until smooth.
5. Combine the cream cheese mixture, shredded cheddar, Monterey Jack, and diced tomatoes with green chilies. Stir until well mixed.
6. Add the cooked beef mixture and crumbled bacon into the cheese mixture. Stir to combine.
7. Transfer everything to a baking dish or oven-safe skillet.
8. Bake at 350°F (175°C) for 20–25 minutes, until the cheese is bubbly and golden on top.
9. Remove from oven and sprinkle chopped pickles and fresh chives or green onions on top before serving.
Notes
Can be made ahead and reheated before serving.
