Soft Pumpkin Spice Cookies are tender, moist, and bursting with warm fall spices. These easy-to-make cookies offer a soft, cake-like texture perfect for cozy autumn treats.
Ingredients
1 cup unsalted butter, softened
1 cup brown sugar, packed
½ cup granulated sugar
1 cup pumpkin puree
1 large egg
2 teaspoons vanilla extract
2¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
½ teaspoon ground cloves
½ teaspoon ground ginger
Instructions
1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
2. Cream butter, brown sugar, and granulated sugar until fluffy.
3. Beat in pumpkin puree, egg, and vanilla until smooth.
4. Whisk flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
5. Stir dry ingredients into wet until just combined.
6. Drop dough by tablespoon onto sheets, spacing 2 inches apart.
7. Sprinkle cinnamon sugar on top, if desired.
8. Bake 12–15 minutes until edges are set and centers look soft.
9. Cool on sheets 5 minutes; transfer to wire racks to cool completely.
Notes
Store cookies in an airtight container for up to 5 days. Freeze for longer storage.
Optional: Sprinkle cinnamon sugar on top before baking for extra crunch.
