Description
Spaghetti with sun dried tomato cream sauce is a rich and creamy pasta dinner made in under 30 minutes. The sauce blends sun dried tomatoes, garlic, spinach, and Parmesan into a comforting yet elevated one-pan meal. Quick enough for weeknights, but elegant enough to serve guests.
Ingredients
12 oz spaghetti
2 tablespoons olive oil (use oil from sun dried tomato jar if desired)
3 cloves garlic, minced
½ teaspoon red pepper flakes (optional)
½ cup chopped sun dried tomatoes (in oil, drained slightly)
2 cups fresh spinach
1 cup heavy cream
½ cup grated Parmesan cheese
½ cup reserved pasta water (as needed)
Salt and black pepper, to taste
Fresh basil or parsley, for garnish (optional)
Instructions
1. Cook spaghetti in salted water until al dente. Reserve ½ cup of the pasta water, then drain.
2. In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes; sauté 30 seconds.
3. Stir in sun dried tomatoes and cook for 1–2 minutes until fragrant.
4. Add spinach and sauté until wilted.
5. Pour in heavy cream and stir to combine. Simmer 2–3 minutes.
6. Add Parmesan cheese and stir until melted and smooth.
7. Add cooked spaghetti and toss to coat. Use reserved pasta water to loosen sauce as needed.
8. Season with salt and pepper. Garnish with fresh basil or parsley and serve.
Notes
Try adding grilled chicken or shrimp for extra protein.
Swap in arugula or kale instead of spinach.
Use Pecorino Romano for a saltier cheese kick.
To lighten the dish, substitute half-and-half for the cream.
