Ingredients
1 lb (450g) ground beef
1 tablespoon masa harina
1 tablespoon chili powder
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground cumin
½ teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
¾ cup (180ml) water
1 cup (240g) refried beans
4 large flour tortillas
1 cup (240ml) red enchilada sauce
1 cup (100g) shredded cheddar cheese
¼ cup diced white onion
¼ cup sliced black olives
Instructions
1. Cook ground beef in a skillet until browned, about 5-7 minutes, then drain fat.
2. Stir in masa harina, chili powder, onion powder, garlic powder, cumin, paprika, salt, pepper, and water; simmer 10 minutes.
3. Heat refried beans in a microwave for 1-2 minutes and warm tortillas in a damp paper towel for 30 seconds.
4. Spread ¼ cup beans and ¼ cup beef mixture with onions on each tortilla, roll tightly, and place seam-side down.
5. Top each with ¼ cup enchilada sauce and ¼ cup cheese; microwave 1-2 minutes or bake at 350°F for 10 minutes.
6. Garnish with olives and serve hot.
